You may remember that a while back I reviewed a white Zinfandel made by Beringer in Napa Valley, California. This article reviews another California white Zinfandel, a kosher one made by Baron Herzog. Zinfandel is perhaps America's only indigenous European-style grape variety. It is the source of fruity, powerful red wines. But it is also transformed into White Zinfandel, an extremely popular rose wine accounting for about one wine bottle in ten sold in the United States. Approximately six out of seven Zinfandel bottles are white or should I say rose? Are they onto something?
Philip Herzog made wine in Slovakia for the Austro-Hungarian court well over a century ago. Emperor Franz-Joseph liked his products so much that he named Philip a Baron. After World War II grandson Eugene and family came to the United States. For years Eugene produced Concord-style sweet wines in a Brooklyn basement and drove a wine delivery truck. About a decade later the Herzogs founded Royal Wine, which has become the largest producer, importer, and distributor of kosher wines and spirits in the world.

Wine Reviewed Baron Herzog White Zinfandel 2007 10.0% alcohol about $10
Let's start by quoting the marketing materials. Description: Attractive light pink color. The prime aromas are strawberry/rhubarb pie and red cherry. Just a bit sweet with balancing citrus tones. Light bodied, refreshing wine for mildly pungent cheeses or spicy seafood dishes. And now for my reactions.
At the first sips the wine tasted of strawberries and showed good acidity. It was a little sweet and short. Its first pairing was with zucchini stuffed with ground meat, accompanied by stewed potatoes and carrots. The wine became more intense with the meat and too sweet with the vegetables. Slices of yellow watermelon made the wine taste like candy, slightly acidic candy.
The next meal consisted of an Asiago cheese omelet accompanied by pesto. This time I felt I was drinking strawberry candy, a sort of cotton candy. The pesto cut the sugar and increased the wine's length. Dessert was a high-quality French style lemon pie with a very buttery crust. On the positive side the wine was slightly lemony. But the downside was that it still tasted like candy.
My final meal was centered around commercially barbecued chicken. When paired with the wings that bathed in a sweet and sour sauce, raspberry came to the fore. Then came the boiled beets. The Zin became more acidic; I was frankly surprised that this liquid paired better with boiled beets than with chicken wings, or in fact than with anything else. I finished the meal with paprika dusted barbecued chicken thighs. The wine dropped backed in acidity.
I ended the bottle with two local cheeses. A Gouda cheese partially tamed the wine's sweetness. It was sweet but not candy, and really was quite pleasant. A Swiss led to a repeat performance but the Zin increased in body.
Final verdict. If you are looking for a wine to accompany boiled beets or cheese this might be a fine choice. Otherwise, I find it way too sweet. This liquid candy might well represent a step forward for those trying to go beyond traditional Concord-based kosher wine. You won't have trouble finding it on the Internet for somewhat less than the price quoted above.

Starbucks is the all-American coffee giant, so you think that they would be on board with the latest eco-friendly advancements, right? You may have to think again because Starbucks recently denied the request of customers to improve the recycling habits of this coffee franchise, yet many customers are not happy with the fact that guns are still allowed at select Starbucks locations.
Overall, Starbucks did not vote in favor of recycling changes, although 11% of Starbucks shareholders were actually in favor of this movement. This initiative was taken in the same manner that the recycling methods of Coca-Cola were recently altered for the better. It seems strange that Starbucks doesn't want to take this effort to recycle since they were recently targeted by the As You Sow Foundation to make these changes. AYS is a program that strives to promote corporate accountability by enforcing compliance with the Toxic Enforcement Act and California's Safe Drinking Water act. The success of this organization thus far has spread to settlements with more than 300 corporate companies to reformulate their products and remove any hazardous ingredients.
For this reason, AYS targeted Starbucks because they annually contribute to landfills in amounts of more than 3 billion coffee cups. Furthermore, their water brand, called Ethos Water, does not contain any recycled plastic, which is something that many other large water brands have started using. It seems that only Starbucks locations in the San Francisco Bay Area choose to fully recycle.
Starbucks' retaliation to these changes was that their cups are made of 10% post-consumer recycled fiber, which makes them compostable in many parts of the US. Starbucks also stated that up to 70% of their stores recycle a minimum of one type of waste, which they claim all depends upon the waste management in that area. That being said, Starbucks was recently questioned about their views on allowing guns within their stores, where they said that they will comply with local gun laws each area so that guns are not yet banned from any of their franchises.
The combination of these two recent developments may or may not change your point of view about Starbucks, though they are still the leading coffee giant in the United States. Right now, Starbucks has over 16,000 stores in more than 40 countries, and they are hoping to commit that all of their paper cups will be recyclable by 2012. The main issue that AYS is having with Starbucks, however, is that they do not have any recycling or collection goals for their 3 billion cups sold on a yearly basis, especially since the cups are hard to recycle because they are coated in a thin plastic.

How to Pour a Beer by: Daniel Erickson
The Pour
Okay, so this has been bothering me for awhile - half the time I watch somebody attempt to pour a beer it is one of the most pitiful things I have ever seen. Pouring a beer into a glass isn't science; in fact, it's pretty easy if you know the basics. Below is the basic pour - I used a Samuel Smith Oatmeal Stout for this demonstration, but this works well for ales, lagers, and stouts. Okay, let's dive in.
1. Grab your favorite brew and pop 'er open. While holding your glass at 45 degrees begin your pour. Hold the beer off the lip and aim for the center of the glass.
2. Continue pouring until the beer is roughly half empty.
3. When you approach the half empty point straighten your glass to 90 degrees and pour right down the middle.
4. As you're pouring down the middle start increasing the distance between the glass and your bottle/can.
5. End the pour a few inches above the glass.
That's it! You should have a perfectly poured beer if you follow those simple steps.
Hefeweizens and Pilsners
That method works well for most beers, but with hefeweizens and pilsners I generally follow a slightly different method.
Hefeweizens are often more carbonated and have unfiltered yeast which you may or may not want to include in your beer. When pouring your hefeweizen start with your glass at the 45 degree angle and pour to about half empty. If you want to include the yeast from the bottle stop here, swirl the bottle around to gather the sediment from the bottom, and continue your pour at the 45 degree angle. If you don't want any yeast there is no need to stop the pour but when your reach the end slowly tilt the bottle up and leave the sediment in the bottle.

Striking out on your own after spending time within the warm confines of a corporate job and working up the corporate ladder can be exhilarating and simultaneously unnerving. When you find yourself in a tough spot, or a moment of self-doubt, I invite you to consider the words of Jim Rohn and remember this: “Profits are better than wages.”

Paul McCartney really summed it up with this quote. “Somebody said to me, 'But the Beatles were anti-materialistic.' That's a huge myth. John and I literally used to sit down and say, 'Now, let's write a swimming pool.'” They understood the power of their ability to sell records and acknowledged that this gave them control and ultimately financial security.
As you take this journey, you will be tempted to quit. An event, or a combination of events, will happen when you are in a particularly vulnerable spot and you will feel like tossing in the towel. You might even consider finding a “real” job.
Football legend, Fran Tarkenton, describes how after three games in the 1977 season he walked into Coach Bud Grant’s office and quit because fans were calling for his head on a platter. He left Minnesota and returned home to Atlanta. After a couple of days, he realized that by quitting he was not only letting himself down, but all of his 47 teammates as well. Remembering that Coach Grant had told him that it is okay to want to quit, as long as you don’t, he returned to his job.
Everyone has these moments. Sometimes they last for a few minutes and sometimes those moments can stretch out to weeks! Successful people understand that it is perfectly okay to feel like quitting now and again as long as they do not give into the feeling. That one law, rigidly adhered to, will win out every time. Your attention may be diverted by aggressive and shiny marketing for a while, but in the end you will go where that law of human nature is adhered to.
Simply put, our prospects and existing customers don't want to be sold into a product or service that serves the seller and doesn't serve the buyer. They are tired of push marketing coupled with shoddy goods and lacking customer service. And this is one huge reason that you, as an entrepreneur, have it over the big guys. The big guys have used push marketing, shoddy goods, and lacking customer service for so long that they are scrambling right now to turn huge, bloated, bureacratic businesses around to save their sales. But they are all missing the one big point that needs to be addressed; Does this new small business location attract the people who buy from you?
If you have a location now, you already know the demographics of your ideal customer. Ask yourself; Does most of your profit come from teenagers, middle aged adults, or the aged? Men or women? Married or single? What income do most of them have? What kind of music to they like? What do the watch on TV? White collar or blue collar?
If you don't have a store right now, and are thinking of opening one, visit a store selling what you would like to sell. Walk around. What kind of people shop there, and buy? ( "Buy" is the important word here) There may be several close stores around your new proposed destination. It may take a whole day. A day well invested.
If you are thinking about moving to a different location, what is going to be around your new store? What kind of businesses are there? Do these businesses attract the type of people that buy from you now? Please don't think that you will change the group of people who make up your customer base. If your customers are mostly high brow older people, a biker bar right next to the new location will kill your business (at least you'll have a place to drown your sorrows).

Yarn Review – Debbie Bliss Alpaca Silk Aran by: Mercedes Aspland
As part of our ongoing attempt to make it easier for people to choose the right yarn for them we are writing reviews of each of our yarns. Today we are going to look at Debbie Bliss Alpaca Silk Aran. We will give you some basic information about it as well as let you know what we think it is like to knot with.
The Alpaca Silk Aran Yarn
The Alpaca Silk Aran yarn is made up of 80% Alpaca and 20% silk. This means that it is very soft but also has a lovely sheen to it that comes from the addition of silk. The Alpaca in this yarn makes it very warm and with 20 colours you have great choice. It is a very heavy yarn with a 50g ball being only 65m in length. The tension of the yarn is pretty much that of a standard Aran weight being 18 stitches and 24 rows on 5mm (US 8) needles.
Knitting with Alpaca Silk Aran
This is another yarn that to me at first glance does not look that impressive, but it does make lovely garments so give it a chance. The big question is what is it like to knit with? Well there are both ups and downs to this yarn. Firstly let me say that I loved knitting with it and have produced myself a scarf that I think I will wear all winter as it is lovely and warm. However on the downside this is a very fluffy yarn and that is no exaggeration. When I was knitting with it I had the garment on my lap and I was covered in bits of yarn. I could literally rub my jeans and get lumps of the yarn in my hand which was not great.
It is also worth mentioning that it does not go very far. I created a cabled scarf for myself and had to use over 10 balls of yarn. This makes it a very expensive yarn to knit with and I would recommend it for smaller garments like scarves and hats rather that very large bulky sweaters. Having said that though, if you were to make a sweater out of this yarn it would look amazing and would keep you so warm you wouldn’t want to take it off in the winter.
Another thing to mention is that the balls are very loosely wound which means as you work your way through one it does not stay together. To make your life easier it may be a good idea to put it on a bobbin before you begin to reduce frustration further down the line.
Conclusion
This is a lovely, warm and heavy yarn that is perfect for the winter. However its weight means that it is not a cost effective yarn to use. If you are looking for a very special winter garment then this may be a yarn to use as it will give you something special but it won’t be cheap.
